Mexican Style Shredded Chicken

Mexican style shredded chicken cooked in the crock pot. Prep ahead and freeze or cook immediately. Great for tacos, quesadillas, burritos, and rice bowls.

 2 chicken breasts
 1 can diced tomatoes with green chilies
 2 jalapenos, de-seeded and diced
 1 bell pepper (any color), diced
 3 scallions, sliced
 ½ tsp onion powder
 ½ tsp garlic powder

Add all ingredients to a gallon sized freezer bag. Lay flat and freeze.
Alternate:
Vacuum all ingredients, except can of tomatoes, and freeze.

Defrost overnight. Add all ingredients to slow cooker and cook on low 6 hours. Shred chicken.

Serve and enjoy.
We like this is burritos, tacos, or as a bowl. It's really versatile!
