Homemade Hot Pockets Two Ways
As a kid, I loved hot pockets. A delicious treat contained in a perfect little package. Now that I’m an adult, I still love the concept. However, I like to have more control over the ingredients of what my family and I put into our bodies. That’s how I decided to try making my own versions of hot pockets.I did this based on ingredients I already had in my fridge. This is how many of my culinary experiments start, with no plan for dinner and a few random ingredients. For this endeavor, I found premade biscuit dough and crescent dough. These seemed perfect to try and stuff and make unique hot pockets.
First, I tried the biscuits. My family is a big fan of anything with BBQ sauce. So I decided to make BBQ Biscuit Pockets. The first step was to sauté some onions and zucchini. Any chance I have to slip some veggies into our meal I take! Then, I added some ground turkey to the skillet. Once it was browned, I mixed in BBQ sauce. That mixture is what I used for my filling.
Next, I took the biscuit dough and rolled it out so it was really thin. This allowed me to stuff more into the biscuit and makes for a thinner crust. Then, I layered shredded cheddar, the BBQ turkey mixture, and more shredded cheddar on top of the biscuit dough.
To finish up, I wrapped the dough around the stuffing in a similar fashion to wrapping a burrito. I dipped my finger in water and ran it along the seals to make sure it didn’t come apart while baking and then placed them seal down on a baking sheet.
After baking for about 20 minutes at 350 degrees we had delicious BBQ Biscuit Pockets for dinner!
A few days later I wanted to try the crescent dough. I decided to make Crescent Pizza Pockets. I’ll admit this one was a lot harder, mainly because the dough didn’t want to cooperate. It came apart much easier than the biscuit and I had a hard time sealing it.
Again, I rolled the dough out thin. Then I put pizza sauce and shredded mozzarella on top. If you want, you can put other toppings in as well (sausage, pepperoni, etc.).
I tried wrapping these in a few different ways. First, I left two triangles together and wrapped it up like a burrito, similar to how I did the biscuits. The triangles liked to try and pull apart though and so I didn’t really like this method. Next, I tried using only 1 triangle and folding the corners up so that I formed a shape like a dumpling. Last, I tried wrapping it like a regular crescent. This seemed like it wouldn’t work at all but actually ended up being the best method.
These baked for about 15 minutes at 350 degrees and came out tasting awesome! While they were a bit of a pain to prepare, the crescent dough tasted really good with the pizza filling.
If you want to cook these for future lunches, simply cook them completely and then wrap in plastic wrap and freeze for later. Then you just reheat in the oven for a delicious lunch!
So there you go, my own little culinary experiments to make homemade pizza pockets. I love doing these trials, they don’t always come out, but it’s always an experience! Now I just need to come up with some more interesting combinations to try. Do you have any suggestions?
