Broccoli Cheddar Nuggets

I started making these when my son was about a year old and since then they have been a staple of his diet. It is a great way to get him to eat his veggie. I have mixed in other vegetables as well, like carrots and cauliflower, but I always use broccoli. Have fun with this and adjust it as your little one desires!


Broccoli Cheddar Nuggets

Broccoli Cheddar Nugget Ingredient List:

  • 2-3 broccoli crowns
  • 2 eggs
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp oregano or another herb
  • 1/2 tsp basil or another herb
  • 1/4-1/2 cup breadcrumbs (too much and the mixture won’t stick together)
  • 1 (8oz) block cheddar cheese, shredded

First, I steam the broccoli (and any other vegetables if desired). Once they are nice and soft I cut them very small. You can also use a food processor. Sometimes I cook the broccoli and then can’t finish making the nuggets (toddlers…sigh…). When that happens I put the cooked broccoli in the fridge and then use the food processor since it’s a lot harder to cut it small enough once the cooked veggies are cold.

Next, I mix in 2 eggs, breadcrumbs, some herbs, garlic and onion powder, and a full block of cheddar cheese (shredded) until it’s well mixed and sticking together well. Then I scoop up about a tablespoon at a time and roll the mixture into nugget sized balls. I flatten each ball slightly and coat in more breadcrumbs. Then I place on nonstick baking sheet or parchment paper.

I bake them in a preheated oven at 350 for 20 minutes and then flip. If they are not coming up easily to flip I bake an additional couple minutes until they come up easily with a spatula. Then I bake them an additional 15 minutes.

After cooling them for 10-15 minutes I serve up a delicious, nutritious lunch! Whatever isn’t eaten within a couple days I wrap in parchment paper (so they do not stick together) and freeze. Then whenever I want to serve them again I can just take however many my son will eat, heat them up and done!
