Apple Muffins
These healthy, delicious apple muffins are sure to be a hit. My toddler and baby loved them! They can be made in bulk and frozen to be enjoyed later too!
Preheat oven to 425 degrees. Prepare a 12 cup muffin tin by either greasing or using muffin tin liners.
In a large mixing bowl, combine dry ingredients (flour, cinnamon, baking powder, baking soda, salt) and blend well with a whisk. Add both the grated apple and the chopped apple and stir well to combine.
In a medium mixing bowl, whisk together oil and maple syrup. Add eggs and beat well. Then, add yogurt, applesauce and vanilla, mixing well.
Stir wet ingredients into dry ingredients, mixing with a big spoon until just combined (leaving some chunks is okay). The batter will be thick! Spoon batter in the prepared muffin tin evenly. Sprinkle brown sugar on top.
Bake in preheated oven til golden, 13-16 minutes or until a toothpick inserted in the middle comes out clean. Allow to cool on wire rack and enjoy!
