Apple Pie Cookies

This is an easy recipe for soft apple pie cookies. I got this recipe from Donna Audet's Easy Recipes for Busy Families facebook group.

Apple Pie Cookies

 1 cup brown sugar, packed
 ½ cup butter, softened
 1 egg
 1 ½ cups all-purpose flour
 ¼ tsp ground cinnamon
 ¼ tsp ground nutmeg
 ½ tsp salt
 ½ tsp baking soda
 1 medium apple, chopped (~1 cup)

Preheat oven to 375 degrees.

Beat brown sugar, butter and egg in large bowl with electric mixer on medium speed until light and fluffy. Stir in flour, nutmeg, salt, and baking soda. Stir in apple.

Drop dough by rounded teaspoonfuls about 2 inches apart onto parchment lined baking sheet.

Bake 8-10 minutes or until light brown. Remove from cookie sheet to wire rack to cool.
