Crockpot Autumn Applesauce

This Autumn Applesauce is made in the crockpot and includes eggplant and other fall veggies for extra nutrition. Great for baking!

CrockPot Autumn Applesauce

 8 apples, cored, and quartered
 1 eggplant, cut into chunks
 other fall veggies (I raid my fridge for any squash, mushrooms, etc that is going to go bad and add to the applesauce)
 2 tbsp cinnamon
 3 cups water

Core apples, cut into quarters, and add to crockpot. Add eggplant and any other fall veggies, cut into chunks. You want to make sure you have more apples than veggies for a better taste.

Sprinkle cinnamon on top of apples and veggies. Then, pour the water over it all to wash the cinnamon down.

Cover and cook on low for 8 hours. I like to stir it every 2 hours, but if you can't do this, don't worry about it.

Use immersion blender to puree apples and veggies right in the crockpot, allow to cool and then put into containers. Store in the fridge for use within a few days or freeze for a stash to keep for winter baking and eating.

ALTERNATE: If you don't have an immersion blender, allow cooked apples and veggies to cool first. Then transfer, in batches to a blender to puree before putting into containers.
