Cauliflower Cheese Crisps: A Healthy Snack

Who doesn’t like cheese? I mean, it’s delicious! And crispy cheese is always a hit in my house. That’s why I’m always making recipes that combine vegetables and cheese so that my whole family can have some delicious nutrition. It’s a great way to take a favorite food and add more of a health benefit. Cauliflower cheese crisps were an immediate hit.

The original recipe I found for these used a lot less cheese but, I’ll be honest, I thought it wasn’t cheesy enough. That’s why  I decided to use more cheese. This had the added benefits of tasting better and being more crispy! They were a big hit with my youngest right away and I know I snagged a few bites as well. Cauliflower cheese crisps can be prepped ahead and frozen for easy snacks and toddler meals. This recipe is also perfect for a healthy appetizer at a party.

Cauliflower Cheese Crisps Inspiration

This started with my broccoli cheddar nuggets which were a hit for a long time with my oldest and I made again for my youngest. These were my first cheesy toddler meal that I made with vegetables. I’ve experimented with a lot of other meals too while I did baby led weaning. After a while, I decided to give a go at Cauliflower Cheese Crisps.

How to Cook the Cauliflower

Honestly, you really don’t need much of anything because these are so easy to make.  I use a stove top steamer because it was cheap. It has never let me down though and I have had this one for years and it’s still going!

Cauliflower Cheese Crisps

Cauliflower Cheese Crisps

 half a head of cauliflower
  cup Parmesan cheese
 8 oz block of cheddar, shredded
 1 egg
 pinch of nutmeg
 pinch of white pepper (or black)

Steam cauliflower until softened. Transfer to a bowl and mash with a fork until cauliflower turns into small grains. Preheat oven to 400 degrees as cauliflower cools.

Add remaining ingredients to bowl once cool and mix evenly to combine.

Grease baking tray to prevent sticking. Spoon ~1 tbsp of mixture out at a time, pressing mixture together so it stays formed in bite sizes, and place on baking tray.

Bake in oven about 20 minutes, then flip and cook an additional 15-20 minutes until golden on both sides. Allow to cool on a cooling rack and enjoy as a snack, appetizer, or toddler meal.

Also, you can prep these ahead and freeze them for up to 2 months.
