I have made this several times as I love it. Today I made a double batch since I didn’t want to have left over peppers. Can this be frozen and reheated? I plan to take premade portions for a camping trip.

I find that potatoes don’t freeze well. To take it camping, I would recommend prepping it all and putting it in a foil packet to cook over a grill or fire. I wouldn’t cook it ahead of time though. When you prep ahead and then cook in foil, the food will taste fresher at the campsite!
