Parmesan Couscous with Crispy Chicken

A simple and delicious meal that is healthy and toddler approved! Couscous with parmesan and served with crispy chicken will be a hit for family dinner. Optional to add garlic sautéed green beans for a more well rounded meal.

 2 chicken breast, cut into strips
 ¼ cup panko breadcrumbs
 ¼ cup + 1/8 cups parmesan
 1 egg
 1 cup couscous
 1 cup chicken stock
 1 ½ tbsp butter
 2 tbsp olive oil
 ½ tsp garlic powder
 ½ tsp basil
 salt and pepper to taste
Optional
 garlic sauteed green beans, cut into bite sized pieces.

Preheat oven to 375 degrees. Mix panko breadcrumbs with 1/8 cup parmesan. Put egg in a bowl and scramble.

Season chicken strips with salt and pepper, coat in egg, then coat in breadcrumb mixture. Place on a nonstick baking sheet. Drizzle1 tbsp olive oil over chicken to coat.

Bake in oven for 15 minutes, flip, then bake an additional 10-15 minutes or until crispy.

Meanwhile, bring broth, 1 tbsp olive oil, 1/2 tbsp butter, and seasonings to a boil in a medium saucepan.

Stir in couscous, remove from heat, cover and let sit about 5 minutes.

Fluff couscous with a fork. Mix in the rest of the butter and parmesan.

Cut cripsy chicken into bite sizes pieces and serve over couscous. Enjoy!
