Leftover Steak Alfredo Pasta: Delicious and Nutritious
After hosting a big barbeque, I was left with a lot of leftover cooked steak. I guess I cooked too much! So, I was left with a bunch of cooked steak that I didn’t want to waste. It is great to throw into quesadillas but I simply had too much and needed another way to use it. That’s when I decided to put it into a creamy alfredo pasta dish!First, I gathered my fresh ingredients. I minced up some garlic, halved cherry tomatoes, chopped up basil, and gathered up some spinach.
Make the Sauce
Then, I started making the alfredo sauce. To make alfredo, I melted some butter and then added the minced garlic. Whisk in some flour and I have a great thickening agent. Add milk to this and simmer it down so it thickens, then I added some parmesan and the basil I chopped up before. The tomatoes and steak went in next. I added the steak at this point so that it would reheat. This recipe can be done with freshly cooked steak as well, just add that to the pasta at the end. Finally, I wilted in the spinach.
While I was making the sauce, I had some fettuccine cooking. Once everything was done, I mixed it all together and voila: leftover steak fettuccine alfredo! It was delicious, had nutrients from the vegetables, and was very filling. The bonus was that my toddler loved it as well! That’s a win-win!
This was the perfect way to use up a large quantity of leftover steak! If you don’t have leftover steak and want to try this, simply cook up some fresh steak. Instead of adding the steak with the tomatoes, serve sliced steak on top of the pasta once it’s finished.

Meanwhile, add butter to large skillet and melt. Add garlic and cook about 1 minute until fragrant.
Whisk in flour and cook another 1 minute.
Add milk and simmer until thickened, about 5 minutes. Mix in basil and parmesan.
Add tomatoes and leftover steak and cook another 2 minutes. Then, wilt in spinach.
Mix in cooked pasta, serve and enjoy!

I can from a family that leaves no steak left over (lol), but this looks like a really yummy recipe. There is no cheese so I imagine it does not taste like a Strogonaff. Anyhow, I have a curious mind and will try this recipe out soon!
