Zucchini Boats

Delicious and nutritious side dish. I love zucchini and making these little boats with tomatoes and cheese and all that yumminess just makes it better! Pair with a chicken cutlet for a great meal.

 2 zucchinis
 2 beef steak tomatoes, diced
 3 garlic cloves, minced
 ½ onion, diced
 ¼ cup monterey jack cheese, shredded
 ¼ cup mozzarella, shredded
 olive oil

Preheat oven to 375 degrees. Prep the zucchini by slicing them in half, and then cutting out the middle in a "U" shape so that the remained looks like a boat. Brush skin of zucchini with olive oil.

Layer the garlic, onion, and tomato in the zucchini boats, dividing each evenly between the four boats. Add the cheese on top of each zucchini boat.

Place boats on a baking sheet and bake in preheated oven for 25-30 mintues or until zucchini is soft and cheese is melted.

Serve and Enjoy!

I like to pair this with chicken cutlets for a complete dinner.
