Healthy-ish pizza bites using zucchini or eggplant base. Delicious and nutritious. Toddler approved! Easily frozen for later.
Preheat oven to 400 degrees. Meanwhile, place the zucchini rounds into a greased muffin tin (they fit perfectly) and the eggplant on a greased baking sheet.
Using a spoon spread pizza sauce on each round. The amount is to your taste, do you like a lot of sauce on your pizza?
Then put the shredded mozzarella on top. I usually use a lot because it hides the vegetable taste more for my son. When I make them for myself I use less to have it healthier.
Add cut up pepperoni.
Bake in preheated oven for 15-20 minutes for zucchini and 20-25 minutes for eggplant.
Serve hot and enjoy!
I like to make this in big batches and vacuum seal some to freeze. They heat up well in the oven and then I'm stocked with delicious and nutritious pizza bites!
