Carrot Cake Muffins

 1 cup shredded carrots
 2 eggs
 ¼ cup rolled oats
 ¾ tsp baking powder
 1 tsp cinnamon
 1 tsp nutmeg
 1 tsp vanilla
 squirt of lemon juice

Preheat oven at 350 degrees. Mix all ingredients together well.

Pour into muffin tin, about 1/2 full.

Bake for 25 minutes. Serve and Enjoy!
