Baked Ziti with Hidden Spinach

Baked ziti is delicious and a hit with more toddlers! So, of course, I had to figure out a way to hide some spinach for extra nutrition! Quick, easy, healthy, and toddler approved. Also, easy to prep ahead and cook later.

What's better than baked ziti? Baked ziti with hidden spinach!

 1 lb ziti, cook according to box directions.
 16 oz ricotta
 ½ lb fresh mozzarella, diced
 16 oz pasta sauce (I like tomato and basil)
 2 cups fresh spinach

Preheat oven to 350 degrees. Put spinach into food processor or blender and chop as small as possible.

Alternate: make about 1/2 cup spinach puree

Put cooked ziti into mixing bowl and mix in all ricotta, 1/2 mozzarella and spinach.

Spray 13x9 pan (or two 8x8 freezable pans if prepping ahead) with cooking spray. Cover the bottom of the pan(s) with half the pasta sauce.

Put ziti mixture on top, then cover with the remaining sauce. Top with the rest of the mozzarella.

If prepping ahead, freeze ziti here. Defrost overnight in the fridge when ready to cook.

Cook in preheated oven for 20-30 minutes. Serve and Enjoy!
