Apple sauce Baked Pork Loin with Cranberry Apple Stuffing
This deliciously apple recipe is great for fall dinner. The pork loin cooked in apple sauce is so tender and perfect paired with a cranberry apple stuffing.
Preheat oven to 375 degrees. Place pork loin in the center of a piece of aluminum foil on top of a baking sheet.
Season pork with rosemary, salt and pepper, then spoon applesauce on top. Wrap in foil and bake in oven for 20 minutes.
Carefully open the foil to release the steam. Spoon applesauce back on top of the pork loin as best you can. Return to the oven with foil open for another 15-20 minutes or until internal temperature reaches 145 degrees.
NOTE: I like to bake the stuffing during this last interval. See below for stuffing preparation.
After preparing the box of stuffing according to the box directions, stir in cranberries and diced apples until well mixed. Place in greased, round baking pan and bake at 375 degrees for 15-20 minutes.
