Healthy Turkey Meatloaf with Veggies

A healthy meatloaf packed with veggies and flavor for a delicious and nutritious dinner.

 1 lb ground turkey
 1 cup onion, finely diced
 ½ cup green pepper, finely diced
 ½ cup red pepper, finely diced
 1 cup celery, finely diced
 1 cup carrots, finely diced or shredded
 1 tbsp olive oil
 2 tbsp (+more to coat) BBQ sauce
 1 cup cheddar, shredded
 1 cup panko breadcrumbs
 2 eggs
 salt and pepper to taste

Preheat oven to 375 degrees. Meanwhile, mix all ingredients well in a large bowl.

Form meat mixture into a loaf and coat top with BBQ sauce.

Bake in preheated oven for 45 min to an hour, or until interior temperature reaches 160 degrees.

Allow loaf to rest 5-10 minutes, then slice. Serve and Enjoy!
